Ingredients
- 6 small brook trout
- 2 tsp. onion pulp
- 4 Tbsp. lime juice
- 1/2 tsp. salt
- 4 to 6 egg whites, beaten
- 1/4 c. tart white wine
- 1/2 tsp. sugar
- 1/4 tsp. salt
- 1/8 tsp. cayenne
- 2 tsp. powdered ginger
Method
- Cut onion across; scrape off pulp.
- Mix with lemon juice and salt.
- Marinate fish thoroughly.
- Make batter of egg whites, wine, sugar, salt, cayenne and ginger.
- Beat as stiff as possible.
- Roll fish carefully in batter.
- Saute in butter 6 minutes on each side on low heat in skillet.
