Ingredients
- 12 artichoke hearts
- 2 eggs
- 6 Tbsp. olive oil
- 1 c. bread crumbs
- 1 Tbsp. chopped parsley
- salt and pepper to taste
Method
- Sprinkle artichoke hearts with salt and pepper.
- Mix parsley with bread crumbs.
- Beat eggs slightly.
- Dip hearts in egg; roll in bread crumbs.
- Fry in hot oil about 3 minutes on each side or until golden brown.
- Serve very hot.
- Serves 6 people.
