- 2 1/2 c. small raisins
- 2 1/2 c. pitted dates, cut up
- 2 c. large Muscat raisins
- 2 c. currants
- 2 small jars candied pineapple
- 2 small jars candied cherries
- 2 c. walnuts or pecans
- 3 c. white sugar
- 3 c. boiling water
- 8 Tbsp. shortening
- 4 c. plain flour
- 2 tsp. baking soda
- 3 tsp. cinnamon
- 2 tsp. ground cloves
- 2 tsp. salt
- 2 eggs
Method
- Put raisins, dates, fruits, sugar, water and shortening in a large pot; bring to a boil, then simmer for 20 minutes.
- Cool. Sift flour once before measuring.
- Combine flour, soda, cinnamon, cloves and salt and sift together.
- Stir into cool mixture, adding eggs and nuts last.
- Pour into very well-greased and floured pan. Bake 1 1/2 hours at 325°.
