Ingredients

  • 1 lb. broccoli, cut into thin stalks
  • 1 cauliflower, cut into florets
  • 1 large zucchini, sliced 1/4-inch
  • 1 patty pan or scallop squash, sliced 1/4-inch
  • 6 to 8 mushrooms, washed and halved
  • 1 sweet red pepper, seeded and cut into strips
  • 1 green bell pepper, seeded and cut into strips
  • 1/4 c. butter, melted
  • 1/2 tsp. garlic salt
  • 1/4 tsp. pepper

Method

  • Arrange vegetables on largest round glass platter that will fit microwave.
  • Place broccoli around edge; arrange cauliflower next to broccoli.
  • Alternate squash, mushrooms and peppers toward center of dish.
  • Combine melted butter, garlic salt and pepper and drizzle over vegetables.
  • Cover with waxed paper and microwave 10 to 15 minutes.
  • Vegetables should remain crisp, not mushy.
