Ingredients
- 4 large tomatoes, chopped into chunks (room temperature)
- 2 to 3 cloves garlic, smashed
- 1 lb. Brie cheese, cut into pieces and rind removed
- 1 Tbsp. chopped basil or parsley
- about 1/2 to 3/4 c. olive oil
Method
- In a noncorrosive bowl, place tomatoes, garlic and basil or parsley. Add olive oil and Brie cheese. Stir gently. Leave out of the fridge for at least an hour. Serve over hot pasta. Delicious!
