Ingredients
- 1/4 c. sugar
- 1 Tbsp. grated lemon peel
- 1/4 c. lemon juice
- 4 tsp. cornstarch
- 1/4 tsp. salt
- 1 Tbsp. butter or margarine
Method
- In 1-quart saucepan, stir sugar, lemon peel and juice, cornstarch, salt and 1/2 cup water, until blended.
- Over medium heat, cook until mixture is very thick and boils briskly, stirring constantly.
- Remove from heat and stir in butter.
- Cool at room temperature.
- (If mixture becomes too thick, stir until of spreading consistency.)
- Fills 2 cakes.
