Ingredients

  • 1/4 c. sugar
  • 1 Tbsp. grated lemon peel
  • 1/4 c. lemon juice
  • 4 tsp. cornstarch
  • 1/4 tsp. salt
  • 1 Tbsp. butter or margarine

Method

  • In 1-quart saucepan, stir sugar, lemon peel and juice, cornstarch, salt and 1/2 cup water, until blended.
  • Over medium heat, cook until mixture is very thick and boils briskly, stirring constantly.
  • Remove from heat and stir in butter.
  • Cool at room temperature.
  • (If mixture becomes too thick, stir until of spreading consistency.)
  • Fills 2 cakes.
