  • 6 apricots
  • 6 peaches
  • 170 g (6 oz/¾ cup) sugar
  • 24 pitted cherries
  • zest of 1 orange , cut into very thin strips
  • 80 ml (2½ fl oz/⅓ cup) dessert wine (optional)

Method

1. Peel the apricots and peaches and cut into thick slices.

2. Put the sugar and 500 ml (17 fl oz/2 cups) water in a saucepan, bring to the boil and cook for 1 minute. Add the apricots, peaches, cherries and orange zest. Simmer for 2–3 minutes, or until the fruit is tender. Remove the fruit from the pan and simmer the syrup until it thickens. Add the dessert wine if you like.

3. Return the fruit to the syrup in the pan to warm. Serve either chilled or warm for breakfast or dessert, with cream, or sprinkled with cinnamon and sugar.
