Ingredients

  • 1 1/2 c. flour
  • 1 c. sugar
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 1 c. shredded carrots
  • 1 Tbsp. lemon juice
  • 3/4 c. water
  • 1/3 c. vegetable oil
  • 1 tsp. vanilla
  • 1/2 c. chopped walnuts (optional)

Method

  • Combine first 5 ingredients in an ungreased 8 or 9-inch square pan.
  • Mix well.
  • Add carrots until blended.
  • Add remaining ingredients.
  • Stir until blended.
  • Scrape pan clean.
  • Sprinkle with nuts, if desired.
  • Bake at 350° for 25 to 30 minutes, until done.
  • Cool in pan on rack.
  • Cut into squares.
