- 1 1/2 c. flour
- 1 c. sugar
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/4 tsp. salt
- 1 c. shredded carrots
- 1 Tbsp. lemon juice
- 3/4 c. water
- 1/3 c. vegetable oil
- 1 tsp. vanilla
- 1/2 c. chopped walnuts (optional)
Method
- Combine first 5 ingredients in an ungreased 8 or 9-inch square pan.
- Mix well.
- Add carrots until blended.
- Add remaining ingredients.
- Stir until blended.
- Scrape pan clean.
- Sprinkle with nuts, if desired.
- Bake at 350° for 25 to 30 minutes, until done.
- Cool in pan on rack.
- Cut into squares.
