Ingredients

  • 1 c. vegetable oil
  • 2 c. sugar
  • 2 large eggs
  • 2 c. all-purpose flour, unsifted
  • 1 tsp. salt
  • 1/2 tsp. soda
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 tsp. vanilla
  • 1 tsp. butter flavoring
  • 1 c. or more chopped pecans
  • 3 c. coarsely diced apples

Method

  • Prepare apples and pecans.
  • Set aside.
  • Beat oil, sugar and eggs until creamy.
  • Sift dry ingredients together.
  • Slowly add dry ingredients to creamed mixture, mixing well.
  • Fold in apples, pecans and flavorings.
  • Line bottom of a 10-inch tube pan with wax paper.
  • Grease pan well and dust with flour.
  • Spoon batter into pan and bake 55 to 60 minutes at 350°.
