Ingredients
- 1 fryer, cut up
- 1 c. all-purpose flour
- 1/2 c. pancake flour
- salt
Method
- Heat shortening in electric skillet to 350°.
- Have enough to come halfway up on chicken.
- Roll chicken pieces in flour and pancake flour.
- Place in hot shortening or oil.
- Salt chicken. Cover and cook until brown.
- Turn over and brown other side.
- Take out; place on a paper towel to drain excess oil.
- Serve hot.
- Time for cooking is about 12 to 15 minutes.
