Ingredients

  • 1 1/2 c. presifted flour
  • 1 c. sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 2/3 c. cooking oil
  • 2 eggs
  • 1 c. finely shredded carrots
  • 1/2 c. crushed pineapple with syrup
  • 1 tsp. vanilla

Method

  • Sift together in a large bowl flour, sugar, baking powder, baking soda, cinnamon and salt.
  • Add cooking oil, eggs, shredded carrots, crushed pineapple with syrup and vanilla.
  • Mix together on medium speed until well blended.
  • Bake in greased and lightly floured pan at 350° for 35 minutes.
  • Cool and frost.
