Ingredients
- 3 eggs
- 1 1/2 c. sugar
- 1 c. coconut
- 1 tsp. vanilla
- 1 Tbsp. vinegar (white)
- 1 Tbsp. cornmeal
- 1 stick margarine
- 1 (9-inch) deep dish pie shell
Method
- Combine eggs, sugar and margarine.
- Stir in balance of ingredients.
- Pour in 9-inch unbaked deep dish pie crust.
- Bake at 350° for 45 to 60 minutes.
- Don't overcook.
- You can refrigerate this pie, but it's better at room temperature and it will keep for several days, covered, outside refrigerator.
