Ingredients

  • 3 lb boneless chicken breasts
  • 2 tbsp oil (for browning chicken)
  • 20 oz can of unsweetened crushed pineapple, undrained
  • 1 cup packed brown sugar, or more to taste
  • 1/2 cup honey, more to taste
  • 1/3 cup lemon juice
  • 1/2 cup melted butter
  • 3 tbsp yellow mustard
  • 2 tsp soy sauce
  • 1 white rice

Method

  • Remove excess fat from chicken
  • Brown chicken in oil on both sides; transfer to crockpot
  • In a small bowl combine remaining ingredients; pour over chicken
  • cover and cook on low about 3 hours or until meat is tender.
  • serve over white rice
