- 3 lb boneless chicken breasts
- 2 tbsp oil (for browning chicken)
- 20 oz can of unsweetened crushed pineapple, undrained
- 1 cup packed brown sugar, or more to taste
- 1/2 cup honey, more to taste
- 1/3 cup lemon juice
- 1/2 cup melted butter
- 3 tbsp yellow mustard
- 2 tsp soy sauce
- 1 white rice
Method
- Remove excess fat from chicken
- Brown chicken in oil on both sides; transfer to crockpot
- In a small bowl combine remaining ingredients; pour over chicken
- cover and cook on low about 3 hours or until meat is tender.
- serve over white rice
