Ingredients
- 2 c. hot or cold mashed potatoes (leftovers okay)
- 1 large (8 oz.) pkg. cream cheese (room temperature)
- 1 small onion, finely chopped
- 2 eggs
- 2 Tbsp. flour
- salt and pepper to taste
- 1 c. crushed potato chip crumbs
Method
- Put potatoes in large bowl.
- Add cream cheese, onion, eggs and flour.
- Beat at medium speed of electric mixer until ingredients are blended.
- Then turn on high speed and beat until light and fluffy.
- Taste and add salt and pepper as needed.
- Spoon into a greased 9-inch baking casserole.
- Sprinkle chip crumbs atop potatoes.
- With knife, poke some of crumbs into potato mixture. Bake, uncovered, in 300° oven for about 35 minutes.
