Ingredients

  • 2 c. hot or cold mashed potatoes (leftovers okay)
  • 1 large (8 oz.) pkg. cream cheese (room temperature)
  • 1 small onion, finely chopped
  • 2 eggs
  • 2 Tbsp. flour
  • salt and pepper to taste
  • 1 c. crushed potato chip crumbs

Method

  • Put potatoes in large bowl.
  • Add cream cheese, onion, eggs and flour.
  • Beat at medium speed of electric mixer until ingredients are blended.
  • Then turn on high speed and beat until light and fluffy.
  • Taste and add salt and pepper as needed.
  • Spoon into a greased 9-inch baking casserole.
  • Sprinkle chip crumbs atop potatoes.
  • With knife, poke some of crumbs into potato mixture. Bake, uncovered, in 300° oven for about 35 minutes.
