Ingredients

  • 2 tablespoons lemon juice
  • 2 tablespoons white balsamic vinegar
  • 1 clove garlic, minced
  • 1/8 teaspoon salt
  • 1/4 cup extra-virgin olive oil
  • 1 15-oz. can black beans, drained and rinsed
  • 1 8 3/4-oz. can whole-kernel corn, drained
  • 1 pint grape tomatoes, halved
  • 8 cups mixed greens
  • 4 cups shredded skinless meat from 1 rotisserie chicken
  • 1/4 cup scallions, white and light green parts, thinly sliced

Method

  • Whisk together lemon juice, vinegar, garlic, salt and olive oil. In a large bowl, combine beans, corn and tomatoes; toss with 2 Tbsp. of vinaigrette.
  • Divide greens among 4 plates. Top with chicken, bean mixture and scallions. Drizzle with remaining vinaigrette.
