Ingredients
- 1 lb. white fish (cod, haddock, etc.)
- 3 eggs, separated
- 3 Tbsp. flour
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. minced garlic
- 1 Tbsp. minced parsley
Method
- Cook fish.
- Remove all skin and bones.
- Mash fine.
- Beat egg yolks until light and thick.
- Add flour.
- Add salt, pepper, garlic, parsley and fish.
- Beat egg whites and fold into fish mixture.
- Drop by tablespoons into hot oil (360° to 370°).
- Cook until golden brown.
