Ingredients

  • 1 pound lean ground beef
  • 1 cup uncooked instant rice
  • 1/4 cup water
  • 2 (14 1/2-ounce) cans chunky tomatoes with pepper and onions*
  • 1/2 teaspoon salt
  • 5 (3/4-ounce) slices Land O Lakes Deli Provolone Cheese, quartered
  • 1 cup tortilla chips

Method

  • Cook ground beef in 10-inch skillet over medium-high heat, stirring occasionally, 5-8 minutes or until browned.
  • Drain off fat.
  • Stir in rice, water, tomatoes and salt.
  • Continue cooking 5-6 minutes or until mixture comes to a boil.
  • Reduce heat to low.
  • Cover; cook, stirring occasionally, 5-6 minutes or until rice is tender.
  • Stir in cheese; sprinkle with tortilla chips.
  • *Substitute 2 (14 1/2-ounce) cans any variety chunky tomatoes with seasonings.
