Ingredients

  • 10 oz. medium noodles
  • 3 oz. butter (3/4 stick)
  • 1/2 pt. sour cream
  • 1/2 pt. heavy cream
  • 4 oz. Parmesan cheese, grated (fresh, if possible)
  • 2 Tbsp. finely chopped chives
  • nutmeg
  • salt
  • pepper

Method

  • Cook noodles.
  • Strain and set aside.
  • Melt butter and add noodles.
  • Add sour cream and stir a minute over low heat.
  • Add cream and cook slowly for 5 minutes.
  • Add cheese, sprinkling of nutmeg and 1 tablespoon chives.
  • Continue stirring until cheese is melted.
  • Sprinkle remaining chives on top before serving.
  • Serves 4.
  • Preparation time:
  • 15 minutes.
  • Serve immediately.
