Ingredients
- 1 c. chopped onion
- 4 Tbsp. margarine
- 4 c. cooked brown rice
- 2 c. sour cream
- 1 bay leaf
- salt and pepper
- 2 (4 oz.) cans green chilies
- 2 c. grated Cheddar cheese
- 1 c. cottage cheese
Method
- Saute onion and butter; add rice, sour cream, cottage cheese, bay leaf, salt and pepper.
- Mix together and put in 9 x 13-inch casserole dish.
- Layer rice, green chilies and cheese.
- Reserve 1/3 cup cheese, end with rice layer.
- Bake at 375° for 20 minutes. Sprinkle remaining cheese in, then bake 20 minutes longer.
