Ingredients

  • 1 c. chopped onion
  • 4 Tbsp. margarine
  • 4 c. cooked brown rice
  • 2 c. sour cream
  • 1 bay leaf
  • salt and pepper
  • 2 (4 oz.) cans green chilies
  • 2 c. grated Cheddar cheese
  • 1 c. cottage cheese

Method

  • Saute onion and butter; add rice, sour cream, cottage cheese, bay leaf, salt and pepper.
  • Mix together and put in 9 x 13-inch casserole dish.
  • Layer rice, green chilies and cheese.
  • Reserve 1/3 cup cheese, end with rice layer.
  • Bake at 375° for 20 minutes. Sprinkle remaining cheese in, then bake 20 minutes longer.
