Ingredients

  • 15 oz fettuccine
  • 4 1/2 tbsp butter
  • 1 1/4 cups heavy cream
  • 2 oz Parmesan cheese, grated
  • 1/2 tsp ground nutmeg
  • None None fresh basil, torn (optional)
  • None None crusty bread, to serve

Method

  • Cook pasta in boiling salted water until al dente. Drain.
  • Meanwhile, melt butter in a large frying pan over high heat. Add cream and 1 oz Parmesan. Bring to a simmer. Add pasta and nutmeg, season and toss to coat.
  • Serve with remaining Parmesan, a few torn basil leaves, if desired, and crusty bread on the side.
