Ingredients

  • 1/4 cup marinated green olives, pitted and torn into pieces
  • 1 (14-ounce) package coleslaw mix
  • 1/2 fennel bulb, thinly sliced
  • 1/4 medium red onion, thinly sliced
  • 1 orange, peeled and segmented
  • 1 tablespoon chopped parsley
  • 3 tablespoons extra-virgin olive oil
  • 1 1/2 tablespoons fresh lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Method

  • In a large bowl, combine olives, coleslaw mix, fennel, red onion, orange segments, and parsley. Toss with olive oil and lemon juice. Season with salt and pepper; toss well.
