Ingredients
- 1/4 cup marinated green olives, pitted and torn into pieces
- 1 (14-ounce) package coleslaw mix
- 1/2 fennel bulb, thinly sliced
- 1/4 medium red onion, thinly sliced
- 1 orange, peeled and segmented
- 1 tablespoon chopped parsley
- 3 tablespoons extra-virgin olive oil
- 1 1/2 tablespoons fresh lemon juice
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Method
- In a large bowl, combine olives, coleslaw mix, fennel, red onion, orange segments, and parsley. Toss with olive oil and lemon juice. Season with salt and pepper; toss well.
