Ingredients

  • 4 large baking potatoes
  • 2 tbsp cream
  • 1/4 cup sour cream
  • 3 tbsp soft, real butter
  • 1 cup freshly shredded parmesan cheese
  • 4 slice cooked bacon, chopped fine
  • 1 tbsp minced onion
  • 1 slices of a nice, sharp cheese. i like to use sharp cheddar or swiss.

Method

  • Clean and cook potatoes in your microwave according to it's settings for potatoes
  • Slice off top of potato so that you can spoon out the pulp of it into a large bowl.
  • Be careful not to break the skins, set hollowed out skins aside.
  • (Use a hot pad as your potatoes will be hot.)
  • It's important to mix ingredients into hot potatoes unless you want them lumpy.
  • Mash potatoes.
  • Then add your ingredients one at a time, ( except the sliced cheese) in order of list, mixing thoroughly after each addition.
  • Spoon prepared potatoes back into skins, adding sliced cheese on top.
  • Grill potatoes on a hot grill over indirect heat until hot throughout and cheese has melted.
  • These are so tasty and fast!
