Ingredients

  • 12 cup butter, softened
  • 13 cup shortening
  • 12 tablespoon water
  • 12 cup milk
  • 12 cup brown sugar (not packed)
  • 14 cup granulated sugar
  • 2 eggs
  • 1 12 tablespoons real vanilla
  • 2 cups flour
  • 1 teaspoon baking powder (not soda)
  • 12 teaspoon salt
  • 2 cups oatmeal
  • 1 cup shredded coconut
  • 12 cup chopped pecans
  • 34 cup chocolate chips (optional)

Method

  • Preheat oven to 350 degrees.
  • Cream together the butter, shortening, water, milk, sugars, vanilla and eggs until smooth.
  • In a separate bowl, mix the flour, oatmeal, baking powder, and salt.
  • Add dry ingredients in two separate batches to the creamed mixture; blending well after each.
  • Stir in the coconut, pecans and optional chocolate chips if so desired.
  • Drop by tablespoonfuls about 2 inches apart and bake roughly 13-14 minutes or until cookies no longer look wet.
  • Cool slightly before moving onto a cooling rack.
