Ingredients

  • 2 very ripe bananas
  • l/2 cup of butter
  • 1 cup sugar
  • 2 eggs
  • 1 1/3 cup sweet rice flour (chapssalgaru )
  • 1 tsp soda
  • l/2 tsp salt
  • l/2 cup walnut, crushed

Method

  • Heat oven 325 F.
  • Get a loaf pan (or a regular pan) ready, oil or butter the sides.
  • Mince bananas well, then add melted butter and eggs, beating well. In a separate bowl, mix sugar, rice flour, soda, salt and walnuts. Slowly mix the dry ingredients into the wet, then spread into the loaf pan.
  • Bake for 40 - 45 mins at 325F. Turn the heat off and leave it in the oven for 5 minutes. Test it with a toothpick -- if it comes out clean, it's done.
