Ingredients

  • 8 endives
  • 3 tablespoons olive oil
  • 1/2 lemon juice
  • 1 3/8 tablespoons butter
  • 8 slices speck
  • 2 apples Reinette
  • salt
  • ground black pepper
  • 6 3/4 fluidounces heavy cream 20 cl
  • 1 cup grated Parmesan

Method

  • Remove the outer leaves of the endives. Rinse and dry them. Cut the endives in 2, lengthwise. Remove the core to remove any bitterness.
  • Heat the olive oil in a frying pan and add the endives and the lemon juice. Make them melt over low heat for 20 minutes. Drain thoroughly.
  • Preheat oven to 180 degrees Celsius.
  • Spread with butter the gratin dish.
  • Cut the slices of speck 2.
  • Wash the apples and dry them. Remove the core and slice them.
  • Interleave the endives, the speck, and the apples slices in the dish. Season with salt and pepper.
  • Pour the cream, sprinkle with parmesan, and give a turn of the pepper mill.
  • Bake 20 minutes and put under the grill for 5 minutes.
