Ingredients
- 1 (16 oz.) can pineapple chunks
- 1/4 c. brown sugar
- 2 Tbsp. cornstarch
- 1/8 to 1/4 tsp. ginger
- 1/2 tsp. salt
- 1/2 c. water
- 1/3 c. vinegar
- 2 (16 oz.) cans cut beets, drained
Method
- Drain pineapple, reserving liquid.
- Mix dry ingredients.
- Add pineapple juice, water and vinegar.
- Cook until thickened, stirring constantly.
- Add beets and pineapple.
- Heat thoroughly. Serve hot or cold.
- Yields 10 servings.
