  • 2 ounces butter
  • 12 lemon
  • 1 teaspoon salt
  • 1 teaspoon cayenne pepper
  • 2 English muffins
  • 4 ounces ham
  • 2 ounces American cheese
  • 1 teaspoon vinegar

Method

  • HOLLANDAISE SAUCE PREP:.
  • small sauce pan melt 1/4 cup butter low heat.
  • small mixing bowl blend 2 egg yokes.
  • add 1 table spoon milk to yokes.
  • add juice of 1/2 a lemmon to yokes.
  • add 1 teaspoon cyane pepper to yokes.
  • beat above contents-and set aside.
  • EGG POACHING:.
  • fill egg poacher with water as manufactures directions.
  • add 1 teaspoon vinigar.
  • poach eggs.
  • HOLLANDAISE SAUCE COMPLETION:.
  • add egg yoke blend to melted butter, reduce heat.
  • stir constantly till hollandaise sauce thickens.
  • ENGLISH MUFFINS:.
  • split with fork.
  • butter.
  • broil for 3-5 minutes.
  • PRESENTATION:.
  • remove muffins from broiler.
  • add cheese.
  • ham.
  • egg.
  • top with sauce.
