Ingredients
- 1 medium eggplant
- 2 Tbsp. butter or margarine
- 1 egg
- 1 medium onion, chopped
- 1 c. bread crumbs or 18 saltine crackers, crushed (I use crackers)
- 1/2 c. grated cheese
- 1 c. milk
- salt and pepper to taste
Method
- Peel and cut eggplant in pieces.
- Boil until tender and drain. Mash eggplant and butter.
- Add beaten egg, onion, grated cheese, milk, saltines, salt and pepper.
- Mix well.
- Pour into casserole dish and cook 30 to 40 minutes at 350°.
