Ingredients
- 1 large eggplant
- 1 medium onion, minced
- 3 c. grated cheese
- 3 c. crushed cracker crumbs
- 1 1/2 c. milk
- 1 stick oleo
- 4 eggs
- salt and pepper to taste
Method
- Peel and slice
- eggplant; cook until tender.
- Drain and mash. Add onion, milk and unbeaten eggs.
- Melt oleo, then add the crumbs and cheese; mix well. Add half of the cheese mixture to the eggplant.
- Pour in casserole dish. Put remaining cheese mixture on top. Bake at 350° until light brown and bubbly. Yields 8 servings.
