Ingredients

  • 1 large eggplant
  • 1 medium onion, minced
  • 3 c. grated cheese
  • 3 c. crushed cracker crumbs
  • 1 1/2 c. milk
  • 1 stick oleo
  • 4 eggs
  • salt and pepper to taste

Method

  • Peel and slice
  • eggplant; cook until tender.
  • Drain and mash. Add onion, milk and unbeaten eggs.
  • Melt oleo, then add the crumbs and cheese; mix well. Add half of the cheese mixture to the eggplant.
  • Pour in casserole dish. Put remaining cheese mixture on top. Bake at 350° until light brown and bubbly. Yields 8 servings.
