Ingredients

  • 1 1/2 cups chicken cooked
  • 1 package taco seasoning mix
  • 4 ounces green chili peppers, canned chopped
  • 1 1/4 cups milk
  • 1 cup corn frozen
  • 3/4 cup biscuit baking mix (bisquick)
  • 3 large eggs

Method

  • Heat oven to 400F (200C).
  • Grease 10 inch pie plate.
  • Mix chicken, corn and Taco mix; spread in plate.
  • Sprinkle with chilies and cheese.
  • Beat remaining ingredients until smooth, 15 seconds in blender on high or 1 minute with hand beater.
  • Pour into plate.
  • Bake until knife inserted halfway between center and edge comes out clean, 25 to 30 minutes.
  • Cool 5 minutes.
  • Serve with sour cream and lettuce.
