Ingredients

  • 1 bunch green onions
  • 2 (6 1/2 oz.) jars marinated artichoke hearts
  • 1 clove garlic
  • 4 eggs, beaten
  • 8 oz. medium Cheddar, grated
  • 6 crackers, rolled

Method

  • Finely mince onions using half of the tops also.
  • Cut the artichokes in thirds and reserve oil.
  • Saute onions and garlic in artichoke oil.
  • Combine all ingredients.
  • Bake in a greased 9 x 9-inch Pyrex dish at 350° for 40 minutes.
  • Serves 4 as main dish. Can be tripled and serves 30 for brunch, cut into 2-inch squares. Can be prepared a day ahead and refrigerated.
  • Re-warm about 15 to 20 minutes in a 350° oven.
