Ingredients
- 1 bunch green onions
- 2 (6 1/2 oz.) jars marinated artichoke hearts
- 1 clove garlic
- 4 eggs, beaten
- 8 oz. medium Cheddar, grated
- 6 crackers, rolled
Method
- Finely mince onions using half of the tops also.
- Cut the artichokes in thirds and reserve oil.
- Saute onions and garlic in artichoke oil.
- Combine all ingredients.
- Bake in a greased 9 x 9-inch Pyrex dish at 350° for 40 minutes.
- Serves 4 as main dish. Can be tripled and serves 30 for brunch, cut into 2-inch squares. Can be prepared a day ahead and refrigerated.
- Re-warm about 15 to 20 minutes in a 350° oven.
