Ingredients

  • 4 medium potatoes
  • 3 slices bacon
  • 1/2 c. chopped onion
  • 1 Tbsp. flour
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 1/2 tsp. celery seed
  • 1/2 c. water
  • 1/4 c. vinegar

Method

  • Cook potatoes and slice.
  • Cook bacon.
  • Remove bacon and reserve fat.
  • Add chopped onion and cook until tender.
  • To that, add flour, sugar, salt and celery seed.
  • Cook over low heat, stirring constantly until mixture is bubbly.
  • Remove from heat; stir in water and vinegar.
  • Heat to boiling, stirring constantly 1 minute. Remove from heat.
  • Crumble bacon in mixture.
  • Add potato slices. Serve warm.
