Ingredients

  • 2 c. unpeeled, shredded raw potatoes
  • 1 onion, chopped or shredded
  • 1/4 c. Egg Beaters
  • 1/4 c. whole wheat flour
  • 1/2 tsp. seasoned salt

Method

  • Preheat oven to 350°.
  • Spray 9 to 10-inch glass pie plate with nonstick spray.
  • Drain shredded potatoes on paper towels and squeeze out excess moisture.
  • Place in medium bowl and mix with onion and Egg Beaters.
  • Mix flour and seasoned salt together; then mix into potato mixture until evenly distributed.
  • Pat this mixture in pie plate so it is evenly spread over bottom and sides to the top.
  • Bake at 350° for 30 minutes.
  • Cool and refrigerate if not using immediately.
