Ingredients
- 2 c. unpeeled, shredded raw potatoes
- 1 onion, chopped or shredded
- 1/4 c. Egg Beaters
- 1/4 c. whole wheat flour
- 1/2 tsp. seasoned salt
Method
- Preheat oven to 350°.
- Spray 9 to 10-inch glass pie plate with nonstick spray.
- Drain shredded potatoes on paper towels and squeeze out excess moisture.
- Place in medium bowl and mix with onion and Egg Beaters.
- Mix flour and seasoned salt together; then mix into potato mixture until evenly distributed.
- Pat this mixture in pie plate so it is evenly spread over bottom and sides to the top.
- Bake at 350° for 30 minutes.
- Cool and refrigerate if not using immediately.
