Ingredients

  • 5 med. baking potatoes
  • 1/2 c. dairy lowfat sour cream
  • 1 (3 ounce.) pkg. softened cream cheese
  • 2 tbsp. lowfat milk
  • 2 tbsp. softened butter
  • 1 teaspoon onion pwdr
  • 1/8 teaspoon white pepper
  • Snipped chives; optional

Method

  • Bake potatoes in a 375 degree oven for 70-80 min or possibly till done.
  • Cut a slice from top of each.
  • Scoop out insides; mash, add in remaining ingredients and beat till smooth and fluffy but still warm.
  • Fill potato shells.
  • Return to oven and bake 15 min more or possibly till heated through.
  • Makes 5 servings.
  • Set oven at 375 degrees.
  • NOTE: Can be made ahead and refrigerated, but hot to room temperature before placing in oven.
  • Easy to double but to only 5 potatoes at a time.
