Ingredients

  • Recipe yields four chicken thighs.
  • (chicken legs and breasts are great for this recipe too)

Method

  • Set oven temperature to 425 degrees.
  • Use roasting pan or glass dish for the chicken. Pat chicken all over using olive oil. Place chicken thigh SKIN SIDE UP in roasting pan leaving at least an inch between each piece. Squeeze lemon all over chicken, letting extra accumulate in the bottom of the roasting dish. Sprinkle about a teaspoon per chicken thigh of lemon zest on top of chicken. Season thighs with salt and pepper to taste and parsley. Stir in minced garlic with the pan lemon juice before putting chicken into the oven.
  • Cook chicken the recommended time or about 35 - 45 minutes depending on size of meat used.
