Ingredients

  • 12 lb French haricots vert, fresh
  • 1 cup red radish, matchsticks
  • 3 summer slicing tomatoes, seeded and diced
  • 1 large avocado, diced
  • 1 (12 ounce) can sweet corn
  • 1 (19 ounce) can waxed yellow beans
  • 1 (19 ounce) can peas
  • 3 tablespoons fresh tarragon, finely chopped
  • 2 teaspoons fresh lemon juice

Method

  • Boil a pot of water.
  • When the water starts to boil add the Haricots Verts a few at a time to the pot an cook for 90 seconds each time.
