Ingredients
- 3 c. rice
- 1 lb. gizzards
- 1 lb. pork
- 1/2 lb. liver
- 1 large onion
- 1 stalk celery
- 2 bell peppers
Method
- Grind the gizzards, liver and pork.
- Wash and cook rice. Brown in about 3 tablespoons of oil.
- Add a little water at a time.
- Let simmer and mix with rice all the browned ingredients. Season with poultry seasonings, sage or any other seasonings you prefer.
- This may be stuffed lightly in turkey or other fowl or browned in casserole.
