Ingredients

  • 3 c. rice
  • 1 lb. gizzards
  • 1 lb. pork
  • 1/2 lb. liver
  • 1 large onion
  • 1 stalk celery
  • 2 bell peppers

Method

  • Grind the gizzards, liver and pork.
  • Wash and cook rice. Brown in about 3 tablespoons of oil.
  • Add a little water at a time.
  • Let simmer and mix with rice all the browned ingredients. Season with poultry seasonings, sage or any other seasonings you prefer.
  • This may be stuffed lightly in turkey or other fowl or browned in casserole.
