Ingredients

  • 4 c. sugar
  • 3/4 c. water
  • 1 tsp. vanilla
  • 1 c. light corn syrup
  • 3 egg whites, stiffly beaten
  • 1 c. broken nuts

Method

  • Place in saucepan over low heat sugar, corn syrup and water. Stir only to mix the ingredients, then cook without stirring to 255°.
  • Beat egg whites until stiff.
  • When temperature of 255° is reached, remove from heat and pour, beating constantly with electric mixer, in a fine stream into the stiffly beaten egg whites.
  • Continue beating until mixture holds its shape and loses its gloss.
  • Add vanilla and nuts.
  • Spread in buttered 9 x 12-inch pan or drop quickly by teaspoon onto waxed paper.
