Ingredients

  • 3 c. white sugar
  • 1 c. white syrup
  • 3/4 c. hot water
  • 1 1/2 c. white sugar
  • 3/4 c. hot water
  • 3 egg whites
  • 1 c. peanut butter
  • 3 Tbsp. butter

Method

  • For first cooking, mix 3 c. sugar, syrup and 3/4 c. hot water and boil till it makes a good thread. Beat whites of three eggs stiff. Pour slowly into eggs, beating vigorously. Continue beating while mixing 1 1/2 c. sugar and 3/4 c. hot water; boil sugar and water until a hard ball is formed when dropped into cold water. Pour second cooking into first cooking. Beat until it forms a stiff dough. Take peanut butter and mix in butter; mix until smooth. Roll candy out on dough board. Spread with peanut butter mixture. Roll up and cut in slices. use powdered sugar to flour dough board. Makes 3 to 4 pounds of candy.
