Ingredients

  • 2 cans (15 1/2 oz.) chunk pineapple (drain and save juice)
  • 2 cups grated cheddar cheese
  • 1 cup sugar
  • 6 Tbsp. pineapple juice
  • 6 Tbsp. flour
  • 1 stick butter
  • 1 tube Ritz crackers

Method

  • Drain pineapple and reserve juice.
  • Spread pineapple in bottom of 9x13 casserole dish.
  • Combine sugar, juice, and flour in small saucepan.
  • Bring to boil and stir 5 minutes.
  • Pour over pineapple.
  • Top with cheese.
  • Melt butter and mix with crumbled Ritz crackers.
  • Sprinkle over pineapple.
  • Bake at 350 degrees for 20 25 minutes.
