Ingredients
- 1 can black-eyed peas
- 2 tomatoes, chopped
- 1 clove garlic
- 1 Tbsp. olive oil
- 1 bunch green onions
- 3 Tbsp. lime or lemon juice
- 1 Tbsp. cilantro or parsley, chopped
Method
- Place peas in colander; rinse with water and drain.
- Combine tomatoes and next 5 ingredients in bowl.
- Stir in peas.
- Cover and refrigerate at least 4 hours.
- Serve with chips.
