Ingredients

  • 1 2/3 cups cannellini beans fresh
  • 2 garlic cloves
  • extra-virgin olive oil
  • 3 sage leaves chopped
  • 1 tomato large ripe, chopped
  • 2 sausages cut up into pieces
  • salt and ground black pepper

Method

  • Place the beans in a terracotta saucepan and add water to cover.
  • Add the tomato, garlic, sage, and sausages.
  • Place the saucepan on the stove and bring it rapidly to a boil. Cover, reduce the heat to a light simmer, and cook for approximately 1 hour.
  • Check the beans for doneness and drain them, leaving some broth.
  • Season with olive oil, salt, and pepper.
  • Serve hot.
