Ingredients
- 1 can salmon (7 3/4 oz.)
- 1 small zucchini, shredded
- 1/2 c. chopped onion
- 1/4 c. butter
- 4 eggs
- 2 Tbsp. water
- 1/2 tsp. dill weed (optional)
- dairy sour cream
Method
- Drain salmon; saute zucchini and onion in 1 tablespoon butter. Remove from skillet.
- Beat eggs, water and dill weed.
- Add butter as needed in skillet to cook omelet.
- When done, spoon on vegetables and salmon.
- Fold in half.
- Serve with sour cream as topping.
