Ingredients

  • smoked hog jowl (as much as you prefer)
  • dried pinto beans (as many as it takes)
  • water (use common sense and add enough so you don't burn your beans)
  • salt (season them until they're as salty as you want them to be)

Method

  • Look through the beans and pick out all the rocks and rotten looking beans.
  • Throw that away and wash the good ones at least 2 or 3 times with clean water.
  • Don't leave any of those beans in my sink for me to have to clean out later.
  • Drain all the water out and put the beans in a large pot.
  • Fill it almost to the top with cold water.
  • Add your cut up meat to the pot.
  • Bring it to a boil. Cut down to about medium heat and cook until done, about 2 1/2 to 3 hours.
  • Season with salt and simmer until you're ready to eat.
