Ingredients

  • 1 dozen large eggs
  • 1/2 cup mayonnaise, such as Hellman's
  • 1 tablespoon Dijon mustard
  • 2 teaspoons horseradish
  • 1 teaspoon hot sauce, such as Frank's Hot Sauce
  • 1/2 teaspoon salt
  • Paprika, to top

Method

  • In a large saucepan, cover the eggs with an inch of water.
  • Bring the eggs to a boil, then turn off the water and cover for 15 to 20 minutes.
  • Drain the eggs and cover with very cold water.
  • Carefully peel the eggs.
  • Slice lengthwise and separate the yolks, putting them in a bowl, and set the whites aside.
  • Mash the yolks and mix with the mayonnaise, mustard, horseradish, hot sauce and salt.
  • Spoon or pipe the yolk mixture into the whites.
  • Dust with paprika and chill for 30 minutes before serving.
