Ingredients
- 2 cups Cooked Brown Rice
- 1/3 cups Carrots, Diced
- 1/3 cups Yellow Pepper, Diced
- 1/3 cups Dried Cranberries, Roughly Chopped
- 10 stalks Blanched Asparagus, Chopped
- 1/4 cups Blue Cheese
- 1 Tablespoon Parsley, Chopped
- 1 Tablespoon Olive Oil
- 2 teaspoons Balsamic Vinegar
Method
- Toss all the ingredients in a large bowl and chill until ready to serve.
