Ingredients

  • 2 lb. cauliflower flowerets
  • 2 eggs, beaten
  • vegetable oil
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 3/4 c. bread crumbs
  • 1/2 tsp. paprika

Method

  • Cook cauliflower in 2-inches water approximately 10 to 12 minutes or until tender.
  • Drain and pat dry.
  • Heat oil to 360°, about 1 or 2-inches.
  • Mix bread crumbs and paprika.
  • Dip cauliflower in egg, salt and pepper mixture. Coat with bread crumb mixture.
  • Fry 8 to 10 flowerets at a time in hot oil. Turn occasionally.
  • Cooking time is 2 minutes.
  • Drain.
  • Keep warm in a 200° oven 10 to 15 minutes.
  • Yields 4 to 6 servings.
