Ingredients
- 2 lb. cauliflower flowerets
- 2 eggs, beaten
- vegetable oil
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 3/4 c. bread crumbs
- 1/2 tsp. paprika
Method
- Cook cauliflower in 2-inches water approximately 10 to 12 minutes or until tender.
- Drain and pat dry.
- Heat oil to 360°, about 1 or 2-inches.
- Mix bread crumbs and paprika.
- Dip cauliflower in egg, salt and pepper mixture. Coat with bread crumb mixture.
- Fry 8 to 10 flowerets at a time in hot oil. Turn occasionally.
- Cooking time is 2 minutes.
- Drain.
- Keep warm in a 200° oven 10 to 15 minutes.
- Yields 4 to 6 servings.
