Ingredients
- 2 tbsp butter
- 4 None green onions, sliced
- 1 tsp curry powder
- 1/4 cup jarred roasted red peppers, sliced
- 5 oz ham, chopped
- 8 None eggs
- 1/2 cup canned creamed corn
- 1/4 cup frozen peas
- 2 tbsp chopped fresh flat-leaf parsley
Method
- Heat butter in a large skillet on medium heat. Saute onions and curry powder for 1 min. Add peppers and ham and cook, stirring, for 1 min.
- Beat eggs with creamed corn. Season to taste. Add to pan with peas and parsley. Stir on low heat for 3-5 mins, until thickened and creamy.
