Ingredients

  • 2 tbsp butter
  • 4 None green onions, sliced
  • 1 tsp curry powder
  • 1/4 cup jarred roasted red peppers, sliced
  • 5 oz ham, chopped
  • 8 None eggs
  • 1/2 cup canned creamed corn
  • 1/4 cup frozen peas
  • 2 tbsp chopped fresh flat-leaf parsley

Method

  • Heat butter in a large skillet on medium heat. Saute onions and curry powder for 1 min. Add peppers and ham and cook, stirring, for 1 min.
  • Beat eggs with creamed corn. Season to taste. Add to pan with peas and parsley. Stir on low heat for 3-5 mins, until thickened and creamy.
