Ingredients

  • 1 1/2 c. finely minced, cooked chicken
  • 1/4 c. mayonnaise
  • 3 Tbsp. finely chopped raisins
  • 2 Tbsp. dried onion flakes
  • 2 Tbsp. dried bread crumbs
  • 1 tsp. lemon juice
  • 1/2 tsp. curry powder
  • 1 egg, lightly beaten
  • 1 c. dried bread crumbs
  • 1/2 tsp. curry powder

Method

  • Mix together all ingredients, except egg and the one cup of bread crumbs.
  • Shape into 24 balls.
  • Dip balls in beaten egg and then roll in one cup of bread crumbs.
  • Arrange 12 pieces in a circle on a paper plate and microwave, uncovered, at power level High for 3 to 4 minutes, or until heated through.
  • Repeat procedure with remaining 12 pieces.
  • Serve with curry-flavored mayonnaise.
