Ingredients
- 4 large sweet potatoes
- 3 Tbsp. melted butter
- 1 tsp. salt
- 1 Tbsp. brown sugar
- 1 tsp. orange juice
- 1 c. shredded coconut
- 6 slices canned pineapple
- melted butter
Method
- Boil potatoes until tender; mash and beat in melted butter and salt, brown sugar and orange juice.
- Shape into 6 balls.
- Roll balls in coconut moistened with 1 teaspoon melted butter.
- Dip pineapple slices in melted butter and place on baking sheet.
- Put a potato ball in center of each pineapple and brown in moderate oven about 15 minutes.
