Ingredients

  • 4 large sweet potatoes
  • 3 Tbsp. melted butter
  • 1 tsp. salt
  • 1 Tbsp. brown sugar
  • 1 tsp. orange juice
  • 1 c. shredded coconut
  • 6 slices canned pineapple
  • melted butter

Method

  • Boil potatoes until tender; mash and beat in melted butter and salt, brown sugar and orange juice.
  • Shape into 6 balls.
  • Roll balls in coconut moistened with 1 teaspoon melted butter.
  • Dip pineapple slices in melted butter and place on baking sheet.
  • Put a potato ball in center of each pineapple and brown in moderate oven about 15 minutes.
